My clients have said ‘simple’ and ‘tasty’ for my protein balls recipe!

A quick snack to keep energy levels balanced.  A delicious mouthful of energy in two flavours, chocolate, and vanilla.  I adapted a recipe from my friend and colleague Joanne Shepherd (Nutritional Therapist specialist in Eating Disorders).

My youngest daughter, ‘my little baker’ helped me make them and my other daughter did the photography, so I have a great team at home!  Rolling them in desiccated coconut really makes a difference to the texture and taste.

Ingredients

Chocolate

1/2 cup chocolate

2 Tbsp cocoa powder (or cacao powder)

1 Tbsp almond butter (or peanut butter)

1 Tbsp melted coconut oil (or olive oil)

1 Tbsp stevia (or 1.5 Tbsp brown sugar)

3 Tbsp dark chocolate chips or cacao nibs

Almond or coconut milk (enough to form a dough)

2 Tbsp of desiccated coconut (to roll them in)

Vanilla

1/2 cup vanilla protein powder

1 tsp vanilla essence

1 Tbsp almond butter (or peanut butter)

1 Tbsp melted coconut oil (or olive oil)

1 Tbsp stevia (or 1.5 Tbsp brown sugar)

3 Tbsp dark chocolate chips

Almond or coconut milk (enough to form a dough)

2 Tbsp of desiccated coconut (to roll them in)

 

Method

1. Mix all the ingredients together, then mix in enough milk (coconut or almond) to form a stiff dough.  Using a tablespoon roll into balls and roll in desiccated coconut.  It is ok if it’s a little sticky as it dries out in the fridge.

Store the balls in the fridge.
